Chef Hung

Welcome to Edmonton, Chef Hung! This Taiwanese noodle chain has opened up their first location in Edmonton, near Whyte Ave. Originating from Taiwan, their only other Canadian locations are in Vancouver (no surprise there!). Chef Hung himself is the mastermind behind the secret recipe and authenticity of these Taiwanese noodles. He has won numerous awards in Taiwan including the Taipei International Beef Noodle Festival Competition. Chef Hung has spent 30 years researching and ensuring that the perfect beef noodle experience is delivered.

Disclosure: Although I was invited for a complimentary dining experience by Chef Hung, my review is 100% unbiased and based on my own, sincere experience.

Champion Beef Shank Noodle Soup $14.95

I tried one of Chef Hung’s awarded dishes: the champion beef shank noodle soup. The most important part for me would be the noodles. Here, noodles are made in Vancouver for quality control then imported. They were fresh and had tons of chew in each bite. Lightly seeared short rib slices and marbled beef shank accompanied the noodles. The beef was juicy while the short rib slices were tender. Lastly, the braised beef broth was rich and flavourful. Their soup broth is made from beef bones, beef meats, Chinese herbs, and root vegetables. Overall, this was a delicious Taiwanese beef noodle soup and I can certainly taste the effort that Chef Hung had put into his secret recipe!

There are 4 different noodle types to choose from: thin, flat, vermicelli, and rice. Thin noodles and flat noodles would be customer favourites. The springy noodles are made from delicately selected flour and ingredients. During my dining experience, we had thin noodles in both of the soups.

Champion Beef Brisket Noodle Soup $17.50

My mom came with me to the soft opening and she had their champion beef brisket noodle soup. Her soup, also an awarded one, was similar to mine except her broth was clear. I tried her soup and it tasted lighter than mine, with a hint of sweetness. I enjoyed my broth more because hers was almost bland. There is also house-made chilli oil to add into your soup if you want a bit of spice. I didn’t use any, but my mom did and she really liked it!

Golden Kimchi & Cold Mixed Baby Cucumbers $5.95 each

We also tried two of their side dishes: golden kimchi and cold mixed baby cucumbers. They offer a variety of small dishes, as well as rice dishes if you’re not feeling like noodles. EDIT: I came back a second time and also had their deep fried chicken nuggets ($7.95). Although it was delicious, I thought it was a bit pricey for such a small amount.

Grass Jelly & Apple Cider Drink $3.95 each

I had their grass jelly and my mom had the apple cider drink. The grass jelly was super refreshing and I’d recommend getting it with your meal or even as dessert! It had small pieces of grass jelly instead of the chunky ones you’re normally used to. The apple cider drink tasted like a sparkling version of apple juice. I thought that both of these drinks were made in house but it turns out they’re the canned versions you can find at Asian supermarkets.

Chef Hung is a great addition to Edmonton, considering there aren’t many other Taiwanese restaurants around. As quoted, “Chef Hung would never serve any dish he would not have himself.” This was certainly evident in my dining experience here. It will definitely be my go-to place if I’m craving authentic Taiwanese noodles!
